Summer-Spiked Melon Sticks


Yields 10–12 skewers
- 4 cups watermelon cubes
- 2 cups cubed mango
- 2 Persian cucumbers, sliced
Spiked Lime Marinade
- 2 Tbsp hot honey
- 2 Tbsp tequila
- 1 1/2 tsp lime zest
- 3 Tbsp lime juice
- 1/4 tsp kosher salt
- 12–14 fresh mint leaves, chopped
Whisk all the marinade ingredients in a medium bowl until well combined. Add the watermelon, mango, and cucumbers and toss gently to coat everything evenly. Cover and refrigerate for 30 minutes to allow the flavors to develop.
Once chilled, thread the watermelon, mango, and cucumbers onto skewers, beginning and ending each skewer with a piece of watermelon. Keep skewers chilled until ready to serve.
