Pistachio Cookie Slices

Pistachio Cookie Slices

Yields 20–24 cookies

Slice-and-bake cookies are so easy to make. No matter your baking skills, these cookies are great even for the most intimidated bakers.

Aside for being simple to make, you can also prepare them in advance in ready-to-slice rolls and freeze them until you’re ready to bake. Use this concept to make these delicious pistachio cookies or try it with any of your favorite cookie recipes.

You will need:

  • 1 recipe cookie dough (see link)
  • 1 cup unsalted pistachios
  • melted cookie dip or chocolate
  • crushed pistachios, for decorating
  1. Place the pistachios in a small bowl and cover with water; set aside for 30 minutes.
  2. Drain the pistachios well and place them on a paper towel to dry while you assemble the cookie dough. Add pistachios to the dough and mix well.
  3. Divide the dough in half and roll each half into a long log roughly 2 inches (5 cm) in diameter. Wrap each log in plastic wrap and place in freezer.
  4. Once the dough is solid, remove from the freezer and slice into ¼-inch (½-cm) slices. If the dough cracks when slicing, allow it to thaw a little before continuing to slice.
  5. Bake on a parchment-lined cookie sheet for 12–13 minutes or until bottoms are slightly brown.
  6. Cool cookies on cooling rack.
  7. Dip into melted chocolate and decorate with crushed pistachios.
