PEANUT BUTTER OREO COOKIES

PEANUT BUTTER OREO COOKIES

Easy enough to pull together quickly, this is a great choice for a Shavuos dessert that is guest-worthy and absolutely scrumptious! Use purchased vanilla ice cream to make it even simpler.

Yields about 20 cookies

  • 1 cup (2 sticks) margarine
  • 1 cup brown sugar
  • cup sugar
  • 2 eggs
  • 1 Tbsp vanilla
  • 2 Tbsp peanut butter
  • 1½ Tbsp cocoa
  • 2½ cups lour
  • 1 tsp salt
  • 1 tsp baking soda
  • 10 oz (280 g) chocolate chips
  • 12 Oreo cookies, coarsely crushed

PEANUT BUTTER SAUCE

  • ½ cup peanut butter
  • 4 Tbsp corn syrup
  • 1 tsp vanilla sugar
  • dash of salt
  • 2 tsp oil
  • 4 tsp water

1. Preheat oven to 350°F (175°C).
2. In a large mixing bowl, combine margarine and sugars and beat until fluffy. Add eggs, vanilla, and peanut butter and continue to mix. Add cocoa, lour, salt, and baking soda and mix until combined. Add chocolate chips and chopped Oreos and mix until just evenly incorporated.
3. Form dough into large balls, and place on parchment-lined baking sheets, flattening slightly. Make sure cookies have enough room to spread out a bit. Bake for 16 minutes.
4. To make the sauce: Combine first five ingredients in a small pot and heat, stirring until smooth. Add water and mix until incorporated.
5. Warm cookies and sauce before serving, and serve with vanilla ice cream
