Lotus Oatmeal Bars
| July 9, 2024I was seriously not sure if I wanted to share this recipe with everyone, because it’s so fantastically delicious that now it’ll be sitting on everyone’s counters. But I decided to share it because being unique is a wonderful thing, but not when it comes to that perfect snack. Try this confection once, and you’ll be making it on repeat just like me. I guarantee it!

Yields 32 mini bars
1 cup brown sugar (or ½ cup golden sugar)
1 cup sugar (or ½ cup Splenda blend)
2 cups flour (or white whole wheat flour)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
3 cups one-minute oats
1 9-oz (255-g) bag chocolate chips
1 tsp vanilla extract
1 cup oil
2 eggs
½ cup melted lotus butter
Preheat oven to 350°F (175°C). Grease a 9x13-inch (23x33-cm) pan with cooking spray.
Combine sugars, flour, baking powder, baking soda, salt, oats, and chocolate chips in a large bowl. Add vanilla extract, oil, and eggs. Mix well by hand. (Mixture will be very thick, so work it until it’s well-combined.)
Press half the oatmeal mixture into the bottom of the pan. Spread the melted lotus butter over the whole surface. Top with the second half of the oatmeal mixture. Press firmly to smooth it out.
Bake on the center rack for 35 minutes. Remove the pan from the oven and slice into bars.
Return to oven and bake for an additional 15 minutes. Remove from oven and reinforce the slices. Cool completely.
