Lemon Zest Biscuits

Looking for the perfect cookie that will please both young and old? Try these lemon zest biscuits! They’re sweet, yet with that lemony kick that’s sure to please everyone’s palate.

YIELDS 45 COOKIES

  • ½ lb (225 g) margarine or shortening
  • 1 egg
  • 2 egg yolks
  • 1 Tbsp vanilla extract
  • 1¾ cups sugar
  • 4 cups flour
  • 1½ tsp baking powder
  • ½ cup orange juice
  • zest of 1 lemon
  • ½ tsp freshly squeezed lemon juice
Topping
  • 2 eggs, for egg wash
  • ½ cup sugar
  • zest of 2 lemons

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix all ingredients in an electric mixer with the paddle attachment. Do not overmix.

Roll the dough out 14-inch (12-cm) thick. Cut the cookies with your favorite shape cookie cutter. Place the cookies onto the baking sheet and brush with egg wash.

Mix sugar and zest in a small bowl. Sprinkle topping mixture on cookies. Bake for 15–18 minutes. Allow to cool before removing from baking sheet.
