This is my family’s favorite dairy pasta sauce. In the summer we grow our own basil and make pesto sauce from scratch. I’m also a huge fan of milk and drink at least 2 cups a day. I try to incorporate it in many dairy dishes. During corona quarantine, it was the most popular drink in my house. I couldn’t keep up with the demand!
SERVES 4
- 5 Tbsp butter
- 1 clove garlic, crushed
- 2 Tbsp flour
- 1⁄4 cup sour cream
- 1⁄4 cup prepared pesto
- 11⁄2 cups milk
- 1⁄4 tsp salt
In a deep frying pan, melt butter over low heat. Add garlic; stir. Add flour and stir until the mixture thickens. Add sour cream and pesto, stirring constantly until thickened. Slowly add in milk, whisking until it reaches the boiling point. Serve over pasta or fish, or even as a dip for bread.
