Charred Whole Beets

One of my favorite things to do with beets is... treat them like any other root vegetable! Here’s what I do: Buy small yellow or red beets (however many you want). Preheat oven to 450°F (230°C).

Wash them really well and pat dry. Rub each beet with 12 tsp extra-virgin olive oil. Place on a parchment-lined baking sheet. Sprinkle each one with 14 tsp kosher salt and 14 tsp coarse black pepper. Place the baking sheet in the oven and bake for 35 minutes. The beets should be very soft.

Use a large spoon or the bottom of a glass to press down on each beet and gently smash it. Drizzle 14 tsp rice vinegar and 12 tsp honey over each beet. Return to the oven and bake for another 8 minutes. Serve with a drizzle of techinah for the best beets ever!!
