Charred Whole Beets
One of my favorite things to do with beets is... treat them like any other root vegetable! Here’s what I do: Buy small yellow or red beets (however many you want). Preheat oven to 450°F (230°C).
Wash them really well and pat dry. Rub each beet with 1⁄2 tsp extra-virgin olive oil. Place on a parchment-lined baking sheet. Sprinkle each one with 1⁄4 tsp kosher salt and 1⁄4 tsp coarse black pepper. Place the baking sheet in the oven and bake for 35 minutes. The beets should be very soft.
Use a large spoon or the bottom of a glass to press down on each beet and gently smash it. Drizzle 1⁄4 tsp rice vinegar and 1⁄2 tsp honey over each beet. Return to the oven and bake for another 8 minutes. Serve with a drizzle of techinah for the best beets ever!!
