Ramen-Broccoli Stir-Fry

Totally addictive! The savory sauce plus the initial seasoning of the veggies combine to add awesome flavor. Layered seasoning is definitely the way to go! Easy and really tasty.

SERVES 6

  • 8 oz (225 g) ramen noodles, cooked according to pkg directions and rinsed
  • 1½ Tbsp olive oil
  • 2½ tsp minced garlic
  • 2 cubes frozen ginger
  • 2 scallions, sliced (use the white and light green parts)
  • 4 cups frozen mini broccoli florets
  • black and white sesame seeds, for garnish
  • dark green part of scallions, thinly sliced, for garnish
  • shredded cheese (optional)

SAVORY SAUCE

  • 3 Tbsp soy sauce
  • 2 Tbsp sesame oil (no substitutions!)
  • 1 Tbsp sweet chili sauce
  • 1 Tbsp cornstarch
  • 1 tsp hot sauce
  • 1 tsp ketchup
  • pinch salt

Heat oil in a large frying pan. Add the garlic, ginger, and scallions. Sauté for 3 minutes over medium-low heat, stirring occasionally. Add the broccoli and continue sautéing for 10 minutes, stirring  occasionally. Remove from heat.

To prepare the sauce, place all ingredients in a small container. Shake to combine. Add cooked noodles and sauce to the veggies. Mix over low heat to allow the flavors to combine. Garnish with sesame seeds, scallions, and shredded cheese, if desired, before serving.

Tip: This dish is best served the day it’s made.
