Super-Snack Edamame

Super-Snack Edamame
A savory snack or side that is simply irresistible.
SERVES 4–6
- 1 1-lb (450-g) bag frozen edamame
- 2 Tbsp olive oil (or 1 Tbsp olive oil and 1 Tbsp sesame oil)
- 1 tsp soy sauce
- 1⁄4 tsp garlic powder
- 1 tsp kosher salt
- 1⁄8 tsp black pepper
- 1 Tbsp sweet chili sauce
- dash of hot sauce (optional)
Boil, steam, or microwave edamame for 5 minutes. Drain well and set aside.
Heat a skillet over high heat and add the oil. When oil is hot, add the edamame and stir-fry for about 3 minutes. Add the soy sauce, garlic powder, salt, and pepper. Remove from heat.
Stir in sweet chili sauce and hot sauce. Can be served immediately or refrigerated. Enjoyed hot or cold!
Tip: To prepare frozen edamame in their pods, you can either: A boil in water for five minutes and then drain; B steam in a covered double steam pan for five minutes (after the water has reached a boil); or C microwave in a large bowl covered with plastic wrap for five minutes.
