Super Savory London Broil

This fabulous marinade is very versatile and will work on almost any piece of meat. With prices rising rapidly, I chose to use a London broil so you can impress without breaking the bank.

SERVES 6

  • 2 lb (1 kg) London broil
Marinade
  • 2 Tbsp olive oil
  • 2 Tbsp soy sauce
  • 2 Tbsp Worcestershire sauce (fish-free)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp lemon juice
  • 3 cloves garlic, crushed
  • ½ tsp lemon pepper
  • ⅛ tsp Simply Gourmet Chipotle (smoked chipotle) or cayenne pepper

In a gallon-sized ziplock bag, combine all marinade ingredients. Add London broil to the bag and shake to coat. Allow meat to marinate 10–30 minutes.

Preheat grill or broiler.

To grill: Spray grill grates, remove meat from marinade, and place on grates. Grill 4–5 minutes per side, until thermometer reads 130°F (55°C) for medium rare. (If your roast is a thicker cut, add more grilling time to assure your meat is cooked through.) Transfer meat to a cutting board; allow to rest 10–15 minutes before slicing.

To oven-broil: Transfer meat and marinade into a 9x13-inch (23x33-cm) baking pan. Broil on center rack for 5–6 minutes per side (adding more time if the meat is a thicker cut). Proceed as instructed by grilling method.

Note: The sliced meat can also be used for a fabulous meat salad.
