Pastrami Beef Burgers

I’ve been looking to develop a beefburger that rivals my Caramelized Onion and Beef Fry Burgers. I was beginning to wonder if that wasn’t possible…so I’m really excited to share with you these over-the-top, flavor-bomb burgers.
YIELDS 12 PATTIES
- 2 lb (1 kg) ground beef
- 6 oz (170 g) deli pastrami, finely chopped
- 1 Tbsp olive oil
- 5 oz (140 g) baby bella or shiitake mushrooms, finely diced
- ¼ tsp kosher salt
- ⅛ tsp pepper
- 1 Tbsp teriyaki sauce
- ½ cup crushed Snackers crackers
- 1 egg
- 4 Tbsp sweet chili sauce
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp pepper
Heat a 1-quart pot over medium-high heat. Add olive oil and heat through. Add in mushrooms and stir for 4 minutes until browned. Season with kosher salt and pepper; stir in teriyaki. Remove from heat and set aside to cool.
In a large mixing bowl, combine ground beef, pastrami, crushed crackers, egg, sweet chili sauce, spices, and cooled mushrooms. Mix until well blended.
Divide and shape patty mixture into 12 burgers, laying the shaped patties on a parchment-lined baking sheet.
Preheat grill or skillet; grease lightly. Grill 2 minutes per side (for thicker patties, grill 4 minutes per side). Garnish with your favorite toppings.
