Not Another Typical Simanim Salad

I know the components of this salad seem like your typical Rosh Hashanah salad ingredients. But the real star here is the date dressing. It tastes amazing on everything!

SERVES 6–8

  • 1 12-oz (340-g) bag mixed greens
  • 2 precooked large beets, cut into matchsticks
  • ½ cup pomegranate arils
  • 1 Granny Smith apple, cut into matchsticks
Dressing
  • ¼ cup lemon juice
  • ¼ cup vegetable oil
  • ¼ cup honey
  • 6 dates, pitted
  • ½ tsp kosher salt

For the dressing: Place all the ingredients into a blender. Blend on low until everything is combined and the dates are chopped. Place in an airtight container and store in the fridge for up to 1 week.

To assemble salad: Place all the salad components in a large bowl and mix well. Drizzle 14 cup of dressing on top and toss to coat. Serve with remaining dressing on the side. Enjoy!
