No-Bake Frozen Yogurt Bars

Whole grains? Check. Healthy fats? Check. Calcium? Check. Swirly, artsy thing going on in the middle? Check and check. These filling bars are the perfect breakfast on the go, and with no oven needed, they take minutes to throw together. Plus, any breakfast that resembles a popsicle has a lower probability of getting turned down by picky eaters. It’s basic statistics.

YIELDS 12–14 BARS

Crust
  • 1 cup oats
  • ½ cup almond flour
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ¼ cup almond butter
  • ¼ cup maple syrup
Topping
  • 1 cup vanilla Greek yogurt
  • jam, preferably with no sugar added

Mix all crust ingredients together. Press mixture into a Palisades Parchment-lined 9x7-inch (18x23-cm) baking pan.

Spread yogurt on top. Put dollops of jam all around and swirl in with a toothpick.

Place in freezer for around 1 hour. Remove; cut down the middle and then into bars. Store in individual bags in the freezer.
