Kokosh Cake or Buns

Whether you make this into buns or a kokosh cake, you won’t be sorry! The dough rolls out like a dream; it’s so smooth and soft. Any filling can be used, so tailor it to your family’s palate. The end result is a fabulous, moist dessert that won’t last very long on your kitchen counter!

Serves 6

  •  1 oz (30 g) yeast
  • 1/2 cup warm water
  • 5–6 cups flour
  • 1 cup margarine
  • 3/4 cup sugar
  • 3 eggs
  • 1/2 cup orange juice
  • 1 tsp Gefen Vanilla Extract
  • 1 tsp Haddar Baking Powder
  • 1/2 tsp salt
  • oil, for brushing
  • desired filling, for assembly

  • 2 cups Gefen Cocoa
  • 2 cups confectioners’ sugar
  • 1 cup sugar
cinnamon-chocolate filling
  • 5 cups sugar
  • 1 1/2 cups Gefen Cocoa
  • 1/4 cup margarine
  • 3 Tbsp Haddar Egg Whites
  • 2 Tbsp vanilla sugar
  • 1 1/2 Tbsp cinnamon

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Dissolve yeast in water. Add remaining ingredients and knead into a smooth dough. Cover with a dish towel and allow to rise.

Divide into three balls. Roll out each part on a floured board to 1/4-inch (1/2 -cm) thick. Brush the dough with oil.

To prepare your desired fillings, mix the ingredients in a bowl. Spread 1/3 of the filling over each dough and roll up jelly-roll style.

For buns, cut into 1-inch (2 1/2-cm) slices. Lay the slices, face up, on the prepared baking sheet.

Bake for 30 minutes.
