Home-Style Chicken and Rice Dinner

For an easy and delicious dinner that is ready quickly when you’re short on time try this one-pot dinner which not only looks appealing but is delicious too!

INGREDIENTS

YIELDS 4-6 SERVINGS

 

  • 2 Tbsp olive oil
  • 4 chicken cutlets cubed
  • 3 cloves garlic minced
  • 1 onion halved and sliced thinly
  • 2 cup water
  • 1 cup brown Minute rice uncooked
  • 1 tsp salt
  • 1 tsp ginger or 2 tsp fresh ginger
  • ½ tsp black pepper
  • ¼ cup low-sodium soy sauce
  • 1 Tbsp honey
  • 2 Tbsp hoisin sauce
  • 1 red pepper cut in large chunks
  • 1 yellow pepper cut in large chunks
  • 3 stalks celery sliced
  • 10–12 oz (285–340 g) baby bella mushrooms washed and quartered

 

PREPARATION

In a large skillet heat olive oil. Add chicken cubes and stir for 5 minutes. Add garlic and onion. Pour in water Minute rice salt ginger and pepper. Stir until combined. Add soy sauce honey and hoisin sauce. Bring to a boil and toss in remaining vegetables.

Lower heat and cook covered for 5 minutes. Remove from heat and allow to sit for an additional 5 minutes. Remove the lid and stir to fluff the rice. Serve and enjoy!

Variation If you don’t have hoisin sauce you may substitute it with another sauce. It will slightly change the flavor as hoisin does have a distinct taste and offer you the opportunity to play with the recipe in your own kitchen.
