How do you successfully swap ground chicken or turkey for ground beef in a recipe? 

Sauce and seasonings make all the difference! I sometimes sub ground turkey for beef in tacos. The sauce keeps the turkey from being dry (I use the packets in the taco boxes), and the spices help ensure that no one notices the difference in flavor!

I love the mixed grind, which is a mix of chicken and ground beef. I use it in everything from meatballs to burgers and find that it leaves everything much moister. It still has enough of the meat flavor from the chopped meat part of the mix to please all my eaters.
