Crunchy Asian Salad

Crunchy, colorful, and bursting with Asian-inspired flavors, this salad is an absolute winner!

Serves 6

  • 1 cup edamame, prepared according to pkg directions
  • 8 oz (225 g) romaine lettuce, sliced
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup sliced baby corn
  • 1 cup sugar snap peas, sliced on a bias
  • 1 bunch scallions, sliced on a bias
  • ½ cup chow mein noodles, for garnish

Garlic-Chili Dressing

  • 5 Tbsp rice vinegar
  • 2 Tbsp oil
  • 2 Tbsp ketchup
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 2 cloves garlic, crushed
  • 2 tsp sugar
  • 2 tsp sweet chili sauce

 

Combine lettuce and red cabbage and place in a salad bowl or on a platter. Neatly line up the remaining vegetables over the lettuce mixture.

Combine the dressing ingredients in a small bowl and whisk until emulsified. Pour the dressing over the vegetables and garnish with chow mein noodles.
