Crunchy Asian Salad
Crunchy, colorful, and bursting with Asian-inspired flavors, this salad is an absolute winner!
Serves 6
- 1 cup edamame, prepared according to pkg directions
- 8 oz (225 g) romaine lettuce, sliced
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 cup sliced baby corn
- 1 cup sugar snap peas, sliced on a bias
- 1 bunch scallions, sliced on a bias
- ½ cup chow mein noodles, for garnish
Garlic-Chili Dressing
- 5 Tbsp rice vinegar
- 2 Tbsp oil
- 2 Tbsp ketchup
- 1 Tbsp soy sauce
- 1 Tbsp sesame oil
- 2 cloves garlic, crushed
- 2 tsp sugar
- 2 tsp sweet chili sauce
Combine lettuce and red cabbage and place in a salad bowl or on a platter. Neatly line up the remaining vegetables over the lettuce mixture.
Combine the dressing ingredients in a small bowl and whisk until emulsified. Pour the dressing over the vegetables and garnish with chow mein noodles.
