Best Batter-Dipped New York Strip Steaks

New York strip steaks are slices of French roast, the best roast out there. Here they’re dredged in a flavorful batter, deep-fried, and served medium rare. Need I say more?

SERVES 4

• 3 New York strip steaks (1–1½ lb/½–¾ kg)

• ½ cup flour

• ½ cup cornstarch

• 1 tsp baking powder

• 1 tsp baking soda

• 1 tsp salt

• 1 tsp garlic powder

• ½ tsp salt

• ½ tsp pepper

• ¼ tsp cayenne pepper

• 1 egg

• ⅔ cup cold beer

• oil, for frying

DIPPING SAUCE

• ⅓ cup mayonnaise

• 1 Tbsp ketchup

• 1 Tbsp lime juice

• 1 clove garlic, crushed

• ¼ tsp black pepper

• ⅛ tsp cayenne pepper

Whisk all dry ingredients together in a large bowl. Add the egg and beer and whisk until combined. Pour about 2 inches (5 cm) of canola oil into a small saucepan. Heat over medium-high heat. Meanwhile, cut the strip steaks into thin slices and place into the batter. Stir until all the meat is coated. Place a few batter-dipped meat strips into the preheated oil and fry until lightly browned, about 30 seconds to 1 minute on each side. Transfer to a paper towel to drain. Continue until all the strips are fried.

To make the dipping sauce, combine all the ingredients in a small bowl. Whisk well. Set aside until ready to serve. These strip steaks are terrific solo or with sweet chili sauce, duck sauce, or this delicious dipping sauce.
