This is a burger experience. The surprise center adds a huge burst of flavor. These are amazing on their own — no need for any toppings.

BURGERS FILLING
- 1 Tbsp olive oil
- 1 6-oz (170-g) pkg sliced beef fry, diced
- 1 medium onion, diced
HAMBURGERS
- 3 lbs (1.3 kg) ground beef
- 3⁄4 cup seasoned panko crumbs
- 3 Tbsp prepared barbecue sauce
- 1⁄3 red onion, grated
- 2 egg yolks
- 3⁄4 tsp salt
- 1⁄4 tsp black pepper
Heat olive oil in a small frying pan over medium heat. Add diced beef fry and toss until crispy, about 4–6 minutes. Remove to a plate. In the same pan, sauté the diced onion over medium-high heat until golden, about 8–10 minutes, stirring constantly. Combine with the beef fry. Set aside.
In a large bowl, combine all the burger ingredients. To form uniform patties, take a 3-inch (71⁄2-cm) jar lid. Place a small piece of plastic wrap inside it. Press a small handful of ground beef mixture into the lid. Press down and level the mixture, then turn over onto a lined baking sheet.
Place 1 Tbsp of the beef fry mixture in the center of half the patties. Top each filled patty with a second, unfilled patty. Seal the edges. Grill patties for 3–4 minutes on each side.
