Everybody loves beef sliders; they’re small and easy to eat. Why not be original and try these mini stuffed and toasted pitas?
YIELDS 20 MINI HALF PITAS
- 1 pkg mini pitas, cut in half
- olive oil spray
- techina, for serving
- 1 lb (½ kg) ground beef
- ½ lb (¼ kg) ground lamb (optional)
- 6 oz (170 g) canned crushed tomatoes
- 5 scallions, chopped
- 1 cup chopped cilantro
- 1 egg
- 2 Tbsp shawarma spice
- ½ tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- ½ cup pine nuts (optional; toast if desired)
Preheat grill to 500°F (250°C).
In a large bowl, mix all filling ingredients together. Carefully stuff the mini pitas with the meat mixture. Spray pitas with olive oil and place on grill for approximately 4 minutes on each side.
Dip into techina and enjoy.
