RECIPE FROM DINING IN
Light and slightly crisp, with a chewy center. You won’t believe there’s no margarine!
YIELDS 3 DOZEN
•1 cup oil
•1 cup sugar
•1⁄2 cup brown sugar
•2 eggs
•2 tsp vanilla extract
•2 cups flour
•1⁄2 cup oats
•1 tsp baking soda
•1 12-oz (340-g) pkg chocolate chips
Preheat oven to 375°F (190°C). Beat oil, sugars, eggs, and vanilla well. Add remaining ingredients except chocolate chips. Beat well. Stir in chocolate chips. Roll dough into 1-inch (2½-cm) balls and place on greased cookie sheets. Leave space between the cookie dough balls, as the cookies will spread as they bake.
Bake for 10–15 minutes, or until lightly browned. Do not overbake.
(Cookies might seem soft when removed from oven; they’ll harden as they cool.)
