Ice Pop Cupcakes

Fun to make, fun to eat, a winner all around!

These cupcakes remind me of the story of the mother of a large family, who gave one of her younger children a full ice pop. One of her older children said, “Mommy, in my days we only got a half a twin pop,” to which the mother replied, “Yes — in your days you had a full mother with half a twin pop. He has half a mother with a full twin pop!”

YOU WILL NEED:

  • cupcakes
  • frosting
  • Mike and Ike jelly beans
  • toothpicks
  1. Using a pastry bag fitted with a star tip, pipe the frosting onto the cupcakes.
  2. Cut the toothpicks into thirds and stick them into the jelly beans so they resemble ice pops.
  3. Place the “ice pops” on the cupcakes. Tip: If you’re short on time, use cake mix and store-bought frosting.
