I tried many pancake recipes till we reached this winner! I make the batter in the beginning of the week and keep it in the fridge for just about every morning.
YIELDS ABOUT 20 PANCAKES
- 2 cups flour
- 1⁄4 cup sugar
- 4 tsp baking powder
- 1⁄4 tsp baking soda
- 1⁄2 tsp salt
- 11⁄2 cups milk (plus up to 1⁄4 cup extra if needed)
- 1⁄4 cup oil
- 2 tsp vanilla extract
- 1 egg
Mix together flour, sugar, baking powder, baking soda, and salt in a large bowl. Make a well in the center and add milk, oil, vanilla, and egg. Stir the wet ingredients together and then slowly fold them into the dry ingredients. Mix until smooth. The batter will be thick and creamy. If you find it’s too thick and doesn’t pour well, add a couple of tablespoons of milk at a time until you reach the desired consistency. Allow the batter to rest while you heat up your pan. Add oil and then fry the pancakes (using 1⁄4 cup of batter, spreading out gently into a round shape) until done.
