Dorito-Crusted Tilapia with Sweet Chili Sauce

Serves 4
- 4 6-oz (170-g) tilapia fillets
- salt, pepper, and chili powder, for seasoning
- 2 1/4 cups crushed Doritos
Sweet Chili Sauce
- 1 1/2 cups mayonnaise
- 1/3 cup sweet chili sauce
- 1 Tbsp soy sauce
- 1 Tbsp honey
- 1 Tbsp lemon juice
- 1/2 tsp hot sauce (optional)
To prepare the sauce, whisk all ingredients in a bowl. Reserve some sauce for dipping.
Preheat oven to 400°F (200°C). Spray a baking sheet with cooking spray.
Season both sides of the tilapia fillets with salt, pepper, and chili powder. Spread a layer of the sweet chili sauce mixture onto each side of the seasoned tilapia fillets.
Dredge the tilapia fillets in crushed Doritos, pressing gently to adhere, making sure that both sides are evenly coated. Place coated tilapia on the prepared baking sheet. Spray the tops of the fish with additional cooking spray. Bake for 12–15 minutes, or until cooked through.
Serve with reserved sweet chili sauce on the side for dipping.
