Quick Granola Bars
This recipe is a cinch; it can be hand mixed in one bowl, and the result is a scrumptious, healthy(ish) nosh.
YIELDS 15–20 BARS
- 1 scant cup sugar
- ¾ cup brown sugar
- ¾ cup oil
- 3 tsp vanilla extract
- 2 eggs
- ⅔ cup + 2 Tbsp peanut butter, divided
- 1 cup flour
- ¾ cup whole wheat flour
- 2 cups oatmeal
- ¼ tsp baking soda
- ⅛ tsp salt
- 8 oz (225 g) chocolate chips
Preheat oven to 350°F (175°C). Grease a 9x13-inch (23x33-cm) pan. Combine sugars, oil, vanilla, eggs, and ⅔ cup peanut butter until smooth. Add flours, oatmeal, baking soda, and salt and mix until well combined. Spread the mixture into the prepared pan. Bake for 20–25 minutes. Remove the pan from the oven; do not turn off the oven. While the cake is still warm, scatter the chocolate chips evenly over the pan and return it to the oven for another 1 minute, allowing the chocolate to melt. Remove from the oven and quickly drop the remaining peanut butter over the pan in ½ teaspoonfuls. Swirl and spread the chocolate and peanut butter to marbleize and coat the bars. Cut while warm. Cool completely before serving.
