Pasta Greek Salad

Serves 6
- 1 12-oz (340-g) pkg creste di galli pasta or pasta of choice, prepared according to pkg directions
- 1 cup grape tomatoes
- 1 cup black olives
- 1/2 red onion, sliced
- 1/2 cup sliced cucumber
- 1/2 cup crumbled feta cheese
Red Wine Vinaigrette
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp oregano
- 1/4 tsp sea salt
- 1/4 tsp coarsely ground black pepper
Combine salad ingredients in a large salad bowl.
Combine vinaigrette ingredients in a cup or small bowl; whisk to emulsify.
Pour the vinaigrette over the pasta salad. Toss well. Enjoy!
