Pasta Greek Salad

A creative twist on a true classic.

Serves 6

  • 1 12-oz (340-g) pkg creste di galli pasta or pasta of choice, prepared according to pkg directions
  • 1 cup grape tomatoes
  • 1 cup black olives
  • 1/2 red onion, sliced
  • 1/2 cup sliced cucumber
  • 1/2 cup crumbled feta cheese
 Red Wine Vinaigrette
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp oregano
  • 1/4 tsp sea salt
  • 1/4 tsp coarsely ground black pepper

Combine salad ingredients in a large salad bowl.

Combine vinaigrette ingredients in a cup or small bowl; whisk to emulsify.

Pour the vinaigrette over the pasta salad. Toss well. Enjoy!
