Creamy Pesto Pasta

Easy to make and bursting with flavor.
Serves 6

  • 1 lb (450 g) fettuccine or pasta of choice, prepared according to pkg directions
  • 1/4 cup grated Parmesan cheese, for garnish
  • 1 1/2 cups marinated mozzarella balls, for garnish (optional)
Creamy Pesto Sauce
  • 3/4 cup prepared pesto
  • 3/4 cup cottage cheese
  • kosher salt and pepper, to taste

In a 3-quart saucepan over medium-high heat, bring pesto and cottage cheese to a low boil. Stir until cottage cheese melts. Add salt and pepper.
Toss pasta with pesto sauce and garnish with Parmesan cheese and marinated mozzarella balls, if desired.
