Lettuce Salad With Creamy Dressing

Dressing Ingredients:
1/3 c. low-fat mayonnaise
1/3 c. plain yogurt
1/3 c. sour cream
1 Tbsp. vinegar
1 tsp. sugar
2-3 Tbsp. fresh parsley chopped or 2-3 tsp. dried
2-3 Tbsp. fresh dill chopped or 2-3 tsp. dried
½ tsp. garlic powder
½ tsp. paprika
Dash salt and pepper to taste
Salad Ingredients:
Head of romaine or iceberg lettuce checked (get an adult to help) and chopped
3-4 cucumbers diced
Approx. 20 cherry tomatoes halved
½ red onion diced
2 cups “Cracker Crisp” – sour cream and onion flavored (also known as Nishnushim or Nishnush crackers)
Equipment:
Measuring cups and spoons
Mixing spoon
Large and small bowl
Directions:
- In small bowl mix mayonnaise yogurt and sour cream until smooth.
- Add remaining ingredients for the dressing and mix until well blended. Set aside.
- Prepare the vegetables and place in a large bowl.
- Right before serving crumble the crackers into smaller but not tiny pieces and place on top of vegetables in bowl.
- Toss the vegetables and crackers together gently. Pour dressing over and toss again to coat.
