Shaved Ice

Shaved ice is a refreshing dessert that has become a go-to for me. I love that you don’t need to take out a blender! You can make this concept with any fruit juice you like, the sky’s the limit.

SERVES 4-6

Grapefruit-Lime Shaved ice
  • 2 cups freshly squeezed grapefruit juice
  • 1/2 cup sugar
  • 1 tsp lime juice
  • 1 tsp lime zest (optional)

Heat the juice and sugar over low heat and cook until sugar is dissolved. Add lime juice and zest if using and stir.

Pour onto a baking sheet and place in the freezer for 30–45 minutes until mostly set. Remove from freezer and shave the ice with a fork. Return to freezer for another 30–45 minutes and shave once more. Rreturn to the freezer until ready to use. 

Coffee Granita
  • 2 cups strong coffee (I used 1/4 cup instant coffee granules dissolved in 2 cups boiling water)
  • 3/4 cup sugar
  • 1 tsp vanilla
  • whipped cream or vanilla ice cream, for serving (optional)

Add sugar to boiling coffee while hot so it dissolves right away. Add vanilla and stir with a fork.

Pour onto a baking sheet and place in the freezer for 30–45 minutes, until mostly set. Remove from freezer and shave the ice. Return to freezer for another 30–45 minutes and shave once more. Return to the freezer until ready to use. 

Serve with whipped cream or ice cream.
