Marinated Tomato Skewers
While these marinated tomatoes are delicious raw, as a salad (halve them if serving that way), grilling them brings out a delicious charred flavor that really takes them over the top. Truly the perfect vegetable side for your next barbecue!
- 1⁄4 cup olive oil
- 1 Tbsp lemon juice
- 1 tsp kosher salt
- 1 tsp oregano
- 1⁄2 tsp garlic powder
- 1⁄4 tsp red pepper flakes
- 6 cloves garlic, minced
- 1 pint cherry or grape tomatoes
In a medium bowl, stir together all ingredients besides the tomatoes until smooth. Add tomatoes and allow to marinate for a few hours, up to overnight. Thread a few tomatoes onto each skewer, reserving remaining marinade. Grill or broil tomatoes on high for 4–6 minutes, until starting to char. Just before serving, drizzle reserved marinade over tomatoes.
