YIELDS 16 SQUARES
- 1 box brownie mix
- 10 Lotus Biscoff cookies
- 7 oz (200 g) Rosemarie or Torino chocolate
- 1 cup mini marshmallows
Preheat oven to 350°F (175°C). Spray an 8-inch (20-cm) square baking pan with cooking spray.
Following the manufacturer’s instructions, prepare the brownie batter. Pour half the brownie batter into the prepared pan. Lay the Lotus cookies over the batter (break them up as necessary to get them to fit snugly).
Break the chocolate into pieces and spread over the Lotus cookies. Sprinkle the marshmallows over the chocolate pieces. Pour remaining brownie batter over the marshmallows. Bake for 31–34 minutes. Serve warm or at room temperature.
