Mint Chocolate Chip Ice Cream

I recently read that mint chocolate chip is America’s number-one selling flavor of ice cream after vanilla. Really?? I hadn’t had that flavor in years. Out came the mixer and once it was made the taste took me back to my youth and I fully understood why it’s an all-time favorite. I use Callebaut chocolate chips as they have an authentic bittersweet chocolate flavor and when it’s the star of the ice cream that makes a huge difference.

INGREDIENTS

YEILDS 8 SERVINGS

 

  • 2 8-oz (226-g) containers nondairy whipped topping (I like Rich’s)
  • 3 egg yolks
  • ¾ cup confectioners’ sugar
  • ½ cup soy milk
  • ½ tsp mint extract
  • a few drops green food coloring
  • 1 9-oz (255-g) bag Callebaut chocolate chips
PREPARATION
In the bowl of an electric mixer whip the topping until stiff. Add the remaining ingredients one at a time and mix until just combined. Add the chocolate chips and fold together. Freeze overnight and enjoy.
