Grilled Chicken Appetizer

- 1⁄4 cup light soy sauce
- 2 Tbsp lemon juice
- 1 Tbsp garlic powder
- 5 boneless, skinless chicken breast halves, cut into 1x3-inch (21⁄2x71⁄2-cm) strips
- 1⁄2 tsp sugar
- 4 Tbsp mayonnaise
- 1 8-oz (225-g) pkg shredded lettuce
Mix together soy sauce, lemon juice, and garlic powder. Set aside 2 tablespoons of this mixture and place in the refrigerator. Marinate chicken in the rest of the mixture, preferably overnight. Grill chicken strips (you can use a George Foremantype grill) until cooked through.
Add sugar and mayonnaise to reserved marinade to make dressing.
To serve, arrange lettuce on each plate. Place some grilled chicken strips on the lettuce. Drizzle dressing over each serving.
