Grilled Chicken and Tater-Tot Skewers

Confession time: Every now and then, a recipe idea pops into my head that makes me go “Wait. What?” Yeah, basically I surprise myself. And this recipe is one such case. Can you skewer Tater Tots and grill them? Yes, you can. Will kids love chicken and Tater Tots together on a stick? Yes, they will. Will you make these again and again? Absolutely, yes, you will!

SERVES 6

  • 112 lb (680 g) chicken cutlets, cubed
  • 12 25-oz (710-oz) pkg Tater Tots, partially defrosted

MARINADE

  • 14 cup olive oil
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp lemon juice
  • 1 Tbsp maple syrup
  • 1 Tbsp mustard (I used spicy brown)
  • 1 tsp dried parsley
  • 1 tsp kosher salt
  • 2 cloves garlic, minced

Combine all marinade ingredients in a ziplock bag. Add chicken cubes to bag; marinate for at least an hour, up to overnight. Discard marinade and thread chicken onto skewers, alternating with Tater Tots. Grill or broil on high for 3–4 minutes per side, until chicken is cooked through.
