Fire-Roasted Grape Tomatoes

Fire-roasted grape tomatoes are a staple in my house. Whenever we have grape tomatoes that are past their prime, they go right into the oven! Roasting the tomatoes makes them sweet like candy, and they’re great as a topping for soup, pizza, pasta, or sandwiches.

YIELDS 2 CUPS

  • 2 pints grape tomatoes
  • 2 Tbsp grapeseed or avocado oil
  • 2 Tbsp balsamic vinegar
  • kosher salt, to taste
  • pepper, to taste

Preheat broiler to high. Place all ingredients into a baking dish and mix. Place in oven and broil on high for 10– 15 minutes (depending on how soft the tomatoes are), shaking the pan every few minutes. Store in an airtight container in the fridge for up to one week.
