Cereal Bars

My kids keep asking me to restock their favorite cereals, but every time I check the pantry, it’s full of boxes! I finally decided to take a peak inside and I realized that each box had less than a serving left, which is why it was being left behind.

I hate throwing out perfectly good food, so with school starting I figured an afterschool snack would be a great way to put them to use.

YIELDS 45 BARS

  • 6 cups assorted cereal, lightly crushed
  • 4 cups rolled oats
  • ¼ cup (½ stick) margarine
  • ¼ cup honey
  • 1 16-oz (450-g) tub Marshmallow Fluff
  • ½ cup chocolate chips

Place cereal and rolled oats in a large bowl.

In a medium-sized pot, melt margarine. Add honey and Marshmallow Fluff. Stir to combine. When melted together, remove from heat and pour over cereal.

Mix well, then stir in the chocolate chips. Pat evenly onto a lined baking sheet and cool completely before slicing. Slice into 1x3-inch (212x712-cm) bars.

Tips

Caveat: These are not a healthy snack, just a sweet treat to greet the kids with and tide them over until dinner is ready!

You can use any mix of cereals for these bars.

You can replace half the Marshmallow Fluff with peanut butter, which will add some protein, but I omitted nuts, since our schools are nut free.
